Let me say that when I first read the title to this recipe I went, “Ewwwww”.  Yet I have professed that I will try anything, once.  This recipe is not only easy to make, it tastes INCREDIBLE!  Let me preface this by saying that the chef who is supplying me with her healthy living recipes is Amanda Freeland.  Amanda is the wife to one of my best friends Ernest Freeland (who owns the Crofton Bike Doctor in Gambrills/Crofton MD).

Let me tell you something about Amanda.  I am working with her to create a bio, but until then you get to get my insights to her life (at least the parts that matter for cooking and health!).  When I met Amanda, she was not in the greatest health and wanted to change this.  Yet unlike many of us, Amanda had an excuse for not having the best of health…as she is a trained Pastry Chef.  I personally can only imagine the health I would have if I was a Pastry Chef.  In the words of Ernest, “When she’s baking cakes, I feel like I’m getting fat just sitting here on the couch smelling the aromas.”  It’s sooo true.  Her cakes, cookies, confections, and sweets are AMAZING.  Yet, her skills in the kitchen don’t stop with pastries, no they go on through to the full course of a meal.  I have eaten foods (like the recipe below) that I would have rather died before consuming.  Yet, she has opened my eyes to new worlds of food and culinary delights.

So like I said, she was not in the greatest of health…that is until about a year or so ago she decided to change her lifestyle.  She realized that she was miserable being out of balance, so she began to work on her health (one of the areas that made her the most miserable I believe).  She got a trainer and started to research new healthier recipes and cooking styles.  Over the last year, she has lost OVER 95 LBS!!!!  She looks absolutely amazing, and I know for a fact that she feels better about herself…wouldn’t you?!?

So this is series of recipes/articles are all going to be the start of her newest cook book (yes she has a published one now and I am working to get a link so you can buy her family recipes).  So I beg of you, dear reader, go out and shop for the ingredients, then make this recipe and let me know what you think.

Ok here it is…

Curried Butternut Squash Kabobs

1 (2pound ) butternut squash, peeled seeded and cut into 1 inch cubes

3 tablespoons unsalted butter, melted

1 teaspoon curry powder

¼ teaspoon salt

Dash cayenne pepper, optional

Place squash in a 13/9 inch pan that has been sprayed with pan release.  Combine the remaining ingredients.  Drizzle over the squash and toss to coat.  Bake, uncovered, at 450 degrees for 20-25 minutes or until tender(but not mushy) and lightly browned, stir every 8 minutes.  Cool.  Thread squash onto skewers.  Grill over medium heat for 3 to 5 minutes on each side, or until heated through. This is a  great  side dish with any meal.  Also can be served as an appetizer with a dipping sauce made from equal amounts of sour cream and mango chutney!
